[SAMPLE] What the Aegean Taught Us About the Table

In Turkish, sofra means more than table. It is the gathering around it — the plates that arrive to be passed, the bread that is torn rather than sliced, the conversation that has nowhere else to be.
On the Aegean coast, an evening at the table is not measured in courses. It begins with a few small plates and a cold glass, and it ends whenever it ends. Nobody is in a hurry, least of all the food.
When we set out to build EGE in Canggu, this was the one thing we refused to translate. The menu adapts, the light is different, the sea outside is another sea — but the sofra stays the sofra.
